Chickpea Salad

There are instructions you need to take seriously to get this salad right which is…LOL. Assemble all the ingredients and toss them together. Chickpea is low in fat and high in protein and of course scrumptious. To enjoy this, serve chilled!

1 can chickpea

1 pc onion

1 pc lemon

2 cup cherry tomatoes

3 pcs green bell pepper

2 pcs cucumber

1 pc avocado

1 bunch parsley

4 tbsp olive oil

1 tsp cumin

1 tsp black pepper

1 tsp salt

2 tbsp balsamic vinegar


Combine the avocado (pitted and cubed), cucumber (diced), onion (sliced), green bell pepper (diced), tomatoes (diced), parsley (chopped) and the chickpea (drained) in a large bowl and squeeze juice from half lemon. . Set aside.

To make the salad dressing; combine the oil, vinegar and ½ teaspoon of cumin. Add the salt and pepper to taste and stir thoroughly.

Drizzle the salad dressing over the bowl of chickpea mixture and toss gently.
