Close your eyes and imagine eating a pancake that is made from pure coconut milk and desiccated coconut. Now that is the definition of awesomeness. Open your eyes, get your aprons on and get cooking. This is one very interesting way to make pancakes.
4 pcs eggs
1 cup coconut milk
2 teaspoon vanilla essence
1 teaspoon pure honey
1 cup flour
1 tbsp baking powder
1 pinch salt
4 tbs coconut oil
2 scoops desiccated coconut
Preheat pan over medium-low heat.
In a small bowl, beat eggs until for about two minutes. Mix in milk, vanilla extract, and honey
In another bowl, combine flour, baking powder, and salt and mix together. Stir wet mixture into dry and mix well
Grease pan with coconut oil. Spoon 2 tablespoons of the batter into pan for each pancake. Spread out slightly with the back of a spoon. Cook for a few minutes on each side, until the tops dry out slightly and the bottoms start to brown. Flip and cook an about 2-3 minutes.
Repeat step 4 until all the batter is exhausted.
Garnish with desiccated coconut and serve hot
